The pinnacle of excellence. The balance achieved in this cuvée is so remarkable that it evokes notions of purity. We can also conclude with certainty that this champagne will make an excellent thirty-year-old.
Tasting Notes:
The yellow gold colour is particularly luminous. The effervescence, extremely fine, rises quickly to the surface and caps the wine with a very elegant collar of bubbles.
The nose is intense and surprising. It reveals aromas of pineapple, yellow peach, mimosa, vanilla, coconut, cashew nuts. The expression is exotic and very complex. It is a hair-raising nose, rare and still young, of crazy originality.
The attack on the palate is lively, then the wine makes you appreciate its magnificent fullness. It shows a dynamic body, with an assertive nervous structure, on an elegant saline touch.
The finish offers a warm and astringent note to end its course on an intense chalky and saline sensation. The whole suggests the richness and great potential of this cuvée. This is a champagne with great character
Serving Suggestions:
Serve between 10 and 12°C in a well-shaped flute or wine glass.
With its silky texture and salinity, the 2015 Paradis cuvée will require the company of fish or crustaceans with dense flesh such as lobster, lobster, cod, monkfish or St-Pierre, embellished with tangy sauces and exotic fruits.
