Intense and elegant aromas of ripe fruit, raisins and spices. Persistent, warm flavors, velvety and harmonious. Tremendous on its own, it is traditionally paired with game, stews, and mature cheeses, although it allows for daring, modern pairings as well.
Food pairing:
Cheeses with intense flavors, marbled red meats and less noble cuts such as diaframma and anchovies on BBQ. It can amaze with great raw dishes: scampi, prawns or beef tartare with just a drizzle of evo oil. It is also perfect for dunking Sbrisolona in. In northern cuisines it is used with oily or deep-sea fish, in the Far East with salmon sashimi and umami dishes.
