The first flag planted by Domenico in Ginestraand the first wine with which he made himselfacknowledged in the world. One of the wines that in the last 30 years have made the history of the denomination in its entirety.
The name of this wine reveals the importance of the plot: the "Ciabot" is a house among the vines, almost a shelter for tools; while "Mentin" is the owner from whom Domenico bought his plot of land.

Dark in color with beautiful garnet and ruby highlights, with aromas of red fruit, spice, and toasted hazelnut. The palate is well-structured with impressive depth and power.
96 Points - vvWine.ch, September 2019. "Medium ruby. Still restrained on the nose, seems mysterious, restrained, cool and rather red fruity, lots of cherries, mint herbs, opens more and more in the glass, you want to immerse yourself, the spices alternate with floral notes, wonderful! On the palate taut, very well structured, punchy, dense, still wild, youthful with extremely fine tannins, a top acidity, seems super balanced, shows freshness, a crisp fruit and a wonderfully long, slightly salty finish. Bravo! Can be drunk, but has very good reserves. Best buy! Now until 2035+"

92 Points - Falstaff, November 2014. "Rich, dark ruby with a slight garnet shimmer. Opens with emphatically earthy notes, of truffle and undergrowth, then also ripe plums, some raspberry. Firm and gripping in approach and course, grippy tannin, but also has charming fruit, firm pressure in the finale."
91 Points - Wine Enthusiast, July 2016. "Mint, anisette and red berry aromas lead the nose. These follow through to the palate along with licorice, espresso, coffee, toasted oak and black pepper. It's tightly framed with drying wood tannins, but the bright fruit stands up to the strong oak influence. Drink after 2020."
