Every year a small number of Nebbiolo grapes is picked a little earlier in order to obtain a very drinkable and pleasant wine. The name comes from a dialect word that means “chosen”
VINIFICATION: short cold maceration and fermentation at 16 °C in steel
AGEING: in steel and subsequent refinement in the bottle
ORGANOLEPTIC CHARACTERISTICS: pinkish color, with exotic fruits at the nose, nice drinkability and freshness in the mouth
FOOD PAIRING: excellent choice as an aperitif, it goes well with appetizers based on fish and shellfish
